Sister and brother duo Aubry and Kale Walch, who were born and raised on Guam, are the masterminds behind the first vegan butcher shop in the U.S. - The Herbivorous Butcher. With the success of the shop, they've expanded with a non-profit farm sanctuary, Herbie Butcher's Fried Chicken, and now they have released a cookbook with Chronicle Books.

In 2016, the Herbivorous Vegan Butcher Shop was opened in Minnesota. The creative sibling duo behind this apparent oxymoron were both born on Guam.

In January 2017, their non-profit farm sanctuary, Herbivorous Acres, was established furthering their mission of saving animals and educating people about the harm caused by animal agriculture and in May 2021, Herbie Butcher's Fried Chicken was opened in South Minneapolis, a fast casual all vegan fried chicken shop.

"It's been so long for me too, it's hard to describe, I feel like I'm missing a piece of something that I don't really know about too much, but I know the missig piece is Guam. I think about it quite a bit," they said. "Hopefully within the next year we'll be able to come back, we miss it so much, every single day of our life."

"The love of family and food on Guam is what brought me to where I am today," Aubry told KUAM News. "It's about sharing food with the people you love and our nana - her love language was food. And I believe that the entire island is like that...like you can go anywhere with anybody and be accepted. I'm grateful for being raised that way and I'm grateful for the incredible food I ate, that is just from all over the world and we really hope that this cookbook shows the love we have for the island we were born on."
